1-DNJ closely resembles glucose in structure. In the small intestine it inhibits α-glucosidase, slowing the hydrolysis of disaccharides and lowering the glycaemic index of the food. Any carbohydrate-containing carrier can therefore take it — the main reason it appears in coffee, dairy drinks, plant milk, milk powder and pressed tablets alike.

For export customers this means a simpler solvent-residue file and a clearer process narrative.
